Our Story

During an Army PCS move during the summer of 2020 my wife was gifted a sourdough starter from her mom as we settled into our new home in Texas. For the next few days, it sat dormant on our kitchen counter. Needless to say, she wanted nothing to do with it so I gave it a shot. I started by reading the book “Starter Sourdough” by Carroll Pellegrinelli. This opened my brain up to new terms like levain, discard, lame and ferment. Discovering how everything had to be precise measurements intrigued me to no end. Before I knew it, I was mixing flour, water and our gifted starter in a mason jar. This is where my Petrie was born and I have never looked back since. Growing something so simple and seeing how complex it can become just had me hooked. The feel of the dough after each stretch and fold or coil and fold was amazing. From such simple beginnings during such a complicated time in history is where Ed’s Breds started. It has not been easy up to this point but it sure has been fun. Now we look to continue this journey in San Diego and bring my passion to you.
